Black Beans Over Rice
- 3 Tablespoons Olive Oil
- 1/2 whole Large Onion, Chopped
- 2 teaspoons Minced Garlic
- 1 Tablespoon Pickled Jalapeno Peppers, Diced (store Bought Or See My Recipe Box)
- 1 Tablespoon Chili Powder
- 1 teaspoon Cumin
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 can (15 Oz. Size) Black Beans, Drained
- 1 can (12 1/2 Oz. Size) Chicken Breast Chunks (or Sub Up To 2 Cups Leftover Chopped Cooked Chicken Or Turkey For The Can)
- 1-1/2 cup Rice
- 1 whole Medium Tomato, Chopped
- 2 stalks Cilantro, Chopped
- In a medium saucepan over low heat, saute onions and garlic in olive oil for 3-5 minutes. Add jalapeno peppers, chili powder, cumin, salt and pepper. Stir and cook for 2-3 more minutes. Next add the beans and chicken. Simmer for 30 minutes.
- Prepare rice according to package directions.
- Serve the rice with beans on top. Top with tomatoes and cilantro. This recipe has lovely flavor but is not too spicy for my kids.
