Black Beans Over Rice

  1. In a medium saucepan over low heat, saute onions and garlic in olive oil for 3-5 minutes. Add jalapeno peppers, chili powder, cumin, salt and pepper. Stir and cook for 2-3 more minutes. Next add the beans and chicken. Simmer for 30 minutes.
  2. Prepare rice according to package directions.
  3. Serve the rice with beans on top. Top with tomatoes and cilantro. This recipe has lovely flavor but is not too spicy for my kids.
