Potato And Kale Soup
- 1 Tbsp. margarine
- 1 large onion, chopped
- 1 clove garlic, minced
- 5 c. vegetable stock
- 2 large potatoes, peeled and cubed (about 1 lb. total)
- 1/4 tsp. red pepper flakes
- 1 large bunch kale, trimmed, rinsed and chopped
- 1/2 tsp. salt or to taste
- 1/4 tsp. freshly ground black pepper
- In a large saucepan, heat margarine over medium heat.
- Add onion and garlic and saute for about 5 minutes, or until softened. Add stock, potatoes and red pepper flakes and simmer, covered, for about 20 minutes, or until the potatoes are tender.
- Transfer half the potatoes and 1 cup cooking liquid to a blender or food processor and blend until smooth.
- Return to saucepan.
- Meanwhile, steam kale for 5 to 10 minutes or until tender.
- Stir it into the soup.
- Heat through and season with salt and pepper.
- Yield:
- 4 to 6 servings.
