Potato And Kale Soup

  1. In a large saucepan, heat margarine over medium heat.
  2. Add onion and garlic and saute for about 5 minutes, or until softened. Add stock, potatoes and red pepper flakes and simmer, covered, for about 20 minutes, or until the potatoes are tender.
  3. Transfer half the potatoes and 1 cup cooking liquid to a blender or food processor and blend until smooth.
  4. Return to saucepan.
  5. Meanwhile, steam kale for 5 to 10 minutes or until tender.
  6. Stir it into the soup.
  7. Heat through and season with salt and pepper.
  8. Yield:
  9. 4 to 6 servings.
