Sweet And Sour Ham Balls(Low-Fat)
- 1 beaten egg
- 1 c. bran flakes cereal
- 1/3 c. skim milk
- 1/4 tsp. ground ginger
- 1/2 lb. ground turkey
- 1/2 lb. turkey ham, ground
- 1 (15 1/4 oz.) can pineapple chunks in own juice
- 1 c. thinly sliced carrots
- 1/2 c. chicken broth
- 1/4 c. red wine vinegar
- 2 Tbsp. cornstarch
- 2 Tbsp. honey
- 1 Tbsp. soy sauce
- 1 c. pea pods
- rice or noodles
- In mixing bowl, combine egg, bran flakes, milk and ginger.
- Let stand 5 minutes.
- Add meat and mix.
- Shape into meatballs.
- Bake at 350u0b0 for 30 minutes, uncovered; drain.
- In saucepan, drain pineapple, reserving juice.
- Set both aside.
- In a large saucepan, cook carrots in broth, covered, for 5 minutes or until just tender. Do not drain.
- Combine vinegar, cornstarch, honey and soy sauce. Stir into carrot mixture.
- Stir in reserved pineapple juice.
- Cook and stir until thickened and bubbly.
- Stir in pea pods and cook 2 minutes more.
- Stir in pineapple; heat through.
- Stir in meatballs. Serve over rice or noodles.
- Makes 6 servings.
- Very good.
