Apple, Pecan & Feta Green Salad
- FOR THE SALAD:
- 2 cups Mixed Lettuce Greens
- 1 whole Apple, Cored And Chopped
- 1/2 cups Crumbled Feta Cheese
- 1/2 cups Pecans, Roughly Chopped
- 4 slices Red Onion, Thinly Sliced (optional)
- FOR THE HOMEMADE BALSAMIC DRESSING:
- 1/2 cups Extra Virgin Olive Oil
- 1/2 cups Balsamic Vinegar
- 1 Tablespoon Dijon Mustard
- 1 teaspoon Brown Sugar
- 1 clove Garlic, Minced
- 1/4 teaspoons Salt
- 1/2 teaspoons Black Pepper
- Place greens onto a large plate or into a wide salad bowl. Top with apples, feta, and pecans. Garnish with red onion on the side, if using. Drizzle with balsamic dressing just before serving.
- For the dressing: Whisk all dressing ingredients together in a bowl until sugar dissolves and dressing comes together and emulsifies. This dressing recipe makes quite a bit more dressing than needed for this salad. Store leftovers in refrigerator in an airtight container or jar.
