Layered Orange Mold
- 2 pkg. unflavored gelatin
- 3 1/2 c. orange juice
- 1 c. boiling water
- 4 packets Sweet 'N Low (1 g each)
- 1/4 c. ReaLemon
- 1 c. Mandarin orange sections
- 1/2 c. seedless white grapes, halved
- 1/2 c. mayonnaise
- 1 (3 oz.) pkg. cream cheese, softened
- 1/4 c. chopped pecans
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- Dissolve gelatin in 1/2 cup orange juice for 1 minute.
- Stir into boiling water.
- Add sweetener and stir until thoroughly dissolved.
- Stir in juices (3 cups orange juice and lemon).
- Pour enough mixture to cover 1/2 to 1 inch of mold.
- This becomes the clear top layer.
- Chill until firm.
- Chill larger amount of gelatin mixture until slightly thickened, then fold grapes and orange into this thickened mixture.
- This will be the last to go into mold.
