Cake Batter Funfetti Waffles
- 2 cups Bisquick Mix
- 1-1/3 cup Milk
- 2-1/2 Tablespoons Nonfat Plain Greek Yogurt
- 3-1/2 teaspoons Butter Extract
- 1 Egg
- 3 teaspoons Sprinkles If Desired
- 2 cups Heavy Cream
- 1/4 cups Powdered Sugar
- 1 teaspoon Vanilla Extract
- Preheat waffle iron according to manufacturer's settings. Lightly spray with non-stick cooking spray.
- In a large bowl, combine the Bisquick, milk, Greek yogurt, butter extract and egg. Stir thoroughly until mixed well. Fold in sprinkles.
- Pour required amount of batter into waffle maker (as specified in the manufacturer's instructions) and cook until golden brown and done. Once waffle is done, remove it to a plate and repeat with remaining batter.
- To prepare whipped cream: In a large bowl, whip heavy cream with an electric or stand mixer until stiff peaks form, about 3-4 minutes. Mix in powdered sugar and vanilla.
- Serve whipped cream with waffles. Enjoy!
- Notes:
- 1. I used non-fat, Greek yogurt in place of oil in this recipe. If you would rather use oil, add 1 tablespoons to batter in place of the yogurt.
- 2. Whipped cream can be sweetened depending upon your tastes. I used 1/4 cups of powdered sugar, but you can adjust that to your liking.
