Gumbo(Southern Style)

  1. Slowly boil hen and ham hock together in 3 quarts water.
  2. When done take out chicken.
  3. Let cool; cut up breast in diced pieces. (Remove ham hock from stock.)
  4. Fry large slice of ham; cut in very small pieces.
  5. Skim off all fat from stock.
  6. Fry onion light brown; pour tomatoes into skillet with onion.
  7. Cook 15 minutes.
  8. Add to stock.
  9. Season with salt and pepper.
  10. Put tomatoes, diced chicken and finely cut ham in stock; let cook slowly.
  11. Add pint of chopped oysters (or same amount of crab meat or shrimp, finely cut), okra and flour thickening.
  12. Serve with steamed rice.
