Chocolate Truffle Cookies
- 1/2 cups Confectioners Sugar
- 1 cup Butter Or Margarine, Softened
- 1-1/2 teaspoon Vanilla Extract
- 1 ounce, weight Square Unsweetened Chocolate, Melted
- 2-1/2 cups All-purpose Flour
- 1/4 teaspoons Salt
- 1 cup Semisweet Chocolate Chips

- FOR DUSTING:
- 1/4 cups Confectioners Sugar
- 2 Tablespoons Unsweetened Cocoa
- Heat oven to 375 degrees. Lightly grease cookie sheets.
- In a large bowl, beat confectioners' sugar and butter until light and fluffy. Add vanilla and unsweetened chocolate; blend well. At low speed, blend in flour and salt. By hand, stir in chocolate chips.
- Shape into 1" balls; place on prepared cookie sheets. Bake at 375 degrees for 10-12 minutes. Cool completely.
- In a small bowl, combine the ingredients for dusting. Roll cooled cookies in cocoa dusting mixture. Makes 4 dozen cookies.
- Note: for a pretty presentation, place cookies in paper candy cups.
