Chocolate Truffle Cookies

  1. Heat oven to 375 degrees. Lightly grease cookie sheets.
  2. In a large bowl, beat confectioners' sugar and butter until light and fluffy. Add vanilla and unsweetened chocolate; blend well. At low speed, blend in flour and salt. By hand, stir in chocolate chips.
  3. Shape into 1" balls; place on prepared cookie sheets. Bake at 375 degrees for 10-12 minutes. Cool completely.
  4. In a small bowl, combine the ingredients for dusting. Roll cooled cookies in cocoa dusting mixture. Makes 4 dozen cookies.
  5. Note: for a pretty presentation, place cookies in paper candy cups.
