Chicken Parmesan
- 6 boned chicken breasts or thighs, skinned
- 1/2 tsp. pepper
- 1 Tbsp. margarine, melted
- 1 Tbsp. onion, chopped
- 1 c. skim milk
- vegetable spray
- 1/2 c. fresh mushrooms, sliced
- 1 1/2 Tbsp. flour
- 3 Tbsp. Parmesan cheese
- 1/8 tsp. pepper
- Flatten breasts or thighs between 2 sheets of plastic with a mallet or rolling pin.
- Sprinkle with 1/2 teaspoon pepper.
- Coat large skillet with vegetable spray and place over medium-high heat until hot.
- Saute chicken for 8 minutes, turning once, until tender.
- Transfer to platter and keep warm.
- Wipe skillet with paper towel.
- Add margarine, mushrooms and onion and saute.
- Add flour and stir; add milk and stir until thick.
- Add Parmesan and 1/8 teaspoon pepper.
- Spoon over chicken.
- Garnish with fresh parsley.
- Serves 6 with only 148 calories per serving.
