Chicken Parmesan

  1. Flatten breasts or thighs between 2 sheets of plastic with a mallet or rolling pin.
  2. Sprinkle with 1/2 teaspoon pepper.
  3. Coat large skillet with vegetable spray and place over medium-high heat until hot.
  4. Saute chicken for 8 minutes, turning once, until tender.
  5. Transfer to platter and keep warm.
  6. Wipe skillet with paper towel.
  7. Add margarine, mushrooms and onion and saute.
  8. Add flour and stir; add milk and stir until thick.
  9. Add Parmesan and 1/8 teaspoon pepper.
  10. Spoon over chicken.
  11. Garnish with fresh parsley.
  12. Serves 6 with only 148 calories per serving.
