Babka
- 1 lb. butter
- 1 qt. milk
- 1 1/2 lb. sugar
- 7 eggs (whole)
- 9 egg yolks
- 1 orange rind
- 1 Tbsp. vanilla
- 1 tsp. nutmeg
- 1/4 tsp. mace
- 1 box raisins
- 5 lb. flour less 1 c.
- 3 pkg. dry yeast
- Scald milk and butter.
- Soak raisins in warm water.
- Beat all eggs and sugar.
- Add vanilla, orange rind, nutmeg and mace into egg and sugar mixture.
- Take 3/4 cup lukewarm water, 1 tablespoon of flour and 1 tablespoon of sugar.
- Add yeast; mix and dissolve. Let rise to double its bulk.
- Add milk into egg mixture.
- Add flour (about 2 cups) with raised yeast.
- Keep adding flour slowly and mixing.
- Add drained raisins before last 2 cups of flour and beat well.
- Let rise in pan to double in bulk, then fill pans and let rise about 1 hour.
- Preheat oven to 350u0b0 and bake for 1 hour. Makes 3 in funnel cake pans or makes 5 in regular loaf pans.
