Blueberry-Banana Stuffed French Toast
- 4 slices Light Whole Grain Bread
- 1 Ripe Banana, Peeled And Sliced
- 1/4 cups 2% Ricotta Cheese
- 1 teaspoon Vanilla
- 1 teaspoon Maple Syrup
- 1/2 cups Fresh Blueberries
- 1 Egg, Beater
- 2 Tablespoons Fat Free Milk
- 1/2 teaspoons Ground Cinnamon
- Cooking Spray
- Place one layer of bananas on a slice of bread. Next, combine the ricotta, vanilla, syrup and blueberries in a small bowl. Place 1/2 of the ricotta mixture over the bananas. Top with another slice of bread.
- Combine the egg, milk and cinnamon in a shallow bowl. Dip the stuffed bread into the egg mixture and turn it over to coat both sides.
- Heat a non-stick pan over medium heat. Spray the hot pan with cooking spray. Place the stuffed French toast in the hot pan and cook for 2-3 minutes. Gently turn over the sandwich and cook for another 2 minutes until the toast is golden brown. Remove sandwich from the skillet. Repeat to make the second serving. Serve immediately.
