Banana Cinnamon Muffins
- FOR THE MUFFINS:
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoons Salt
- 3 whole Ripe Bananas, Peeled And Mashed
- 3/4 cups Brown Sugar
- 1 whole Egg
- 1/3 cups Butter, Melted
- 1 teaspoon Vanilla
- FOR THE TOPPING:
- 1/2 cups Brown Sugar
- 1/8 cups Flour
- 1/2 teaspoons Ground Cinnamon
- 1 Tablespoon Butter
- Preheat oven to 375 F. Spray a 12 count muffin pan with non-stick baking spray or line with cupcake papers.
- In a mixing bowl, whisk together flour, baking soda, baking powder, ground cinnamon and salt. Set aside.
- In another larger mixing bowl, beat bananas and brown sugar. Add in egg, butter and vanilla. Mix until combined well. Add the dry ingredients slowly and beat until combined.
- Pour batter into the prepared muffin pan, filling each well about 3/4 full.

- Prepare topping by putting the dry ingredients into a medium bowl. Then cut the butter into the dry ingredients until crumbly. Sprinkle on top of the batter.
- Bake for 20 minutes or until a knife inserted in the center of one comes out clean.
