Chili Non Carne
- 1 Tablespoon Olive Oil
- 1 Onion, Chopped
- 3 cloves Garlic, Minced
- 3 Carrots, Chopped
- 2 Bell Peppers, Stem And Seeds Removed, Chopped
- 2 cans Brown Beans, 240g Cans, Drained And Rinsed
- 1 can Red Kidney Beans, 240g Can, Drained And Rinsed
- 1 can Diced Tomato, With Juice, 240g Can
- 1 pinch Chili Powder
- 1 pinch Salt
- 1 pinch Cayenne
- 2 teaspoons Oregano
- 1 Tablespoon Unsweetend Cocoa Powder
- 1 Tablespoon Chia Seeds
- Heat the olive oil in a large pot over medium heat then add the onion and cook until softened. Add the garlic, carrots and peppers, and saute until soft, about 5 minutes. Add the rest of the ingredients, cover and cook for 40 minutes or more. I think that slow cooking will make it even better.
