Honeyed Chicken With Oranges
- 2 large navel oranges
- 6 chicken breasts, skinned
- 1 Tbsp. oil
- 1 1/2 c. orange juice
- 1/4 c. honey
- 2 to 3 drops hot pepper sauce
- 2 Tbsp. minced ginger root
- 1 Tbsp. cornstarch
- 1/4 c. water
- 3 c. hot cooked rice
- Peel and slice oranges.
- Cut slices into 4 wedges; set aside. Cut chicken into 3/4-inch pieces.
- Heat oil in wok over high heat. Add chicken pieces; stir-fry over medium heat until firm and white, 3 to 4 minutes.
- Add orange juice, honey, hot pepper sauce and ginger, if desired.
- Simmer 10 minutes.
- Combine cornstarch and water.
- Stir into chicken mixture until thickened, 30 to 60 seconds.
- Add orange wedges.
- Stir until hot.
- Serve over rice.
