Low Fat Gajar Halwa (Carrot Halwa)
- 1 pound, 1-2/3 ounces, weight Carrots, Finely Shredded
- 2 pounds, 3-1/3 ounces, weight Low Fat Milk
- 1 Tablespoon Raisins
- 2 Tablespoons Sugar, Or To Taste
- 1/2 teaspoons Cardamom Powder
- 2 Tablespoons Sliced Almonds Or Cashews, For Garnish (optional)
- In a heavy-bottomed deep pot, add shredded carrots, milk and raisins. Cook on medium to medium-low for about 40 minutes to an hour, stirring occasionally, until almost all the milk is absorbed and carrots are cooked. Keep stirring it often so it doesn't stick to the bottom.
- Add sugar to taste and cardamom powder. Mix well and serve. Garnish with chopped nuts, if using.
- It tastes good even cold. I like storing leftovers in an airtight container in the refrigerator and enjoying it at random times just cold out of the refrigerator. If you like it warm, you can warm it in the microwave for few minutes.
