Lois' Strawberry Pie
- 1 pie crust, baked and cooled
- 6 oz. cream cheese, softened
- 1/2 c. powdered sugar
- 1 1/4 c. water
- 3/4 c. sugar
- 1 qt. frozen strawberries
- 2 Tbsp. flour
- 1 (3 oz.) box strawberry Jell-O
- 1 tub Cool Whip
- Mix cream cheese and powdered sugar together thoroughly. Spread 1/2 of the cheese and sugar mixture over the bottom of the prepared pie crust.
- Set remaining cheese and sugar mixture aside. In a saucepan, mix flour and sugar together.
- Add water and whisk until mixed thoroughly.
- Cook over medium heat until thick and clear.
- Add strawberry Jell-O and remove from heat.
- Add frozen strawberries.
- Pour into pie crust and place in refrigerator.
- Once the pie has set, spread the remaining 1/2 of the cheese and sugar mixture over the top.
- Cover with Cool Whip and serve.
