Cheesy Lasagna Soup
- 1 pound Ground Turkey Or Beef
- 1 teaspoon Minced Garlic
- 1 Tablespoon Dry Minced Onion
- 28 ounces, weight Canned Whole Tomatoes, Pureed
- 14 ounces, fluid Can Of Tomato Sauce
- 3 cups Chicken Broth
- 2 Tablespoons Brown Sugar
- 2 teaspoons Dry Italian Seasoning
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 cup Grated Parmesan Cheese
- 2-1/2 cups Dry Lasagna Noodles
- In a large pot over medium heat, brown ground turkey with garlic and onion. Continue until no longer pink. Drain grease if necessary.
- Return meat to pot. Add in tomatoes, tomato sauce, chicken broth, brown sugar, Italian seasoning and salt/pepper. Stir to combine a bit. Bring mixture to a boil, then reduce heat to medium and let it simmer for 15 minutes.
- Add the lasagna noodles. Cook until tender (approximately 10-15 more minutes). Stir in Parmesan cheese.
- If desired, garnish with shredded mozzarella cheese when serving.
