Apple Spice Pudding

  1. Prepare pudding with milk according to directions; set aside. In nonstick skillet, combine
  2. apple juice, sugar, lemon juice and cinnamon and bring to a boil.
  3. Add apples and raisins and cook until tender.
  4. Stir frequently until juice is reduced, 2 to 3 minutes.
  5. Add to pudding.
  6. Stir.
  7. Divide into 4 servings and cover until set.
  8. To serve, top each cup with 1 tablespoon of whipped topping and nutmeg.
  9. Serves 4.
  10. Contains 138 calories, 1 gm fat and 401 mg sodium.
