Blueberry-Cranberry Chicken Salad
- 3 pounds Fresh Skinless, Boneless Chicken Breast, Cubed
- 2 cloves Garlic
- Salt And Pepper, to taste
- 1 whole Apple, Chopped
- 1 cup Walnuts, Chopped
- 2 stalks Celery, Chopped
- 1/2 cups Red Onion, Chopped
- 1 cup Dried Cranberries
- 1-1/2 cup Mayonnaise
- 1 cup Lemon Yogurt
- 1 pint Fresh Blueberries
- Saute chicken and garlic in a skillet. Add salt and pepper to taste. While this cooks, chop the apple, walnuts, celery, and onion and place in a large mixing bowl.
- Once the chicken is cooked, remove from heat and shred or chop into small pieces. Add to bowl.
- Add cranberries, mayonnaise, lemon yogurt and stir everything together. Finally, mix in the blueberries, careful not to mash them.
