Braised Swiss Chard With Bacon

  1. 1. Fry bacon in a large skillet. Remove bacon from pan and drain on towels.
  2. 2. Add onion to bacon fat in pan. Cook at low/medium heat for 4-5 minutes until soft.
  3. 3. Stir in the garlic.
  4. 4. Add Swiss Chard to the pan in batches. Rolling it around to mix up the onion and garlic and to coat the chard with some of the bacon fat.
  5. 5. Add the chicken stock. Put the lid on the pan and braise the chard for about 5 minutes until it is wilted and most of the liquid is evaporated.
  6. 6. While the chard is braising, chop up the bacon.
  7. 7. Add bacon and cheese to chard and cover again until cheese is melted. Serve immediately with some fresh black pepper cracked over the top.
