Chicken Tetrazzini
- 1/2 c. butter or margarine
- 1/2 c. flour
- 1 1/2 c. hot milk
- 2 c. hot chicken broth
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/8 tsp. nutmeg
- 1 (8 oz.) pkg. Mozzarella cheese
- 1 lb. thin spaghetti, cooked
- 2 small cans chopped mushrooms
- 3 lb. chicken breast, cooked and chopped
- Heat butter and stir in flour.
- Combine milk and broth; stir into flour mixture.
- Cook, stirring until sauce is smooth and thickened.
- Blend in salt, pepper, nutmeg and cheese.
- After cheese melts, remove from heat.
- Saute mushrooms in 2 tablespoons butter for 5 minutes.
- Mix half the sauce with spaghetti and mushrooms.
- Place in large baking dish.
- Mix remaining sauce with chicken and place on top.
- Bake 30 minutes at 400u0b0.
