Morning Glory Muffins
- 1/2 c. raisins
- 2 c. flour
- 1 c. sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. grated, peeled carrots
- 1 large green apple, grated
- 1/2 c. sliced almonds
- 1/2 c. sweetened shredded coconut
- 3 eggs
- 2/3 c. vegetable oil
- 2 tsp. vanilla
- Soak raisins in hot water for 30 minutes.
- Drain thoroughly. Preheat oven to 350u0b0.
- Generously grease 15 (1/2-cup) muffin pans. Mix flour, sugar, baking soda, cinnamon and salt in a bowl.
- Stir in raisins, carrots, apple, almonds and coconut.
- Beat eggs with oil and vanilla.
- Stir into flour mixture until just combined. Divide batter among muffin cups.
- Bake until golden brown and tester inserted comes out clean, about 20 to 22 minutes.
- Cool 5 minutes, then remove from pan.
