Creamed Corn
- 5 pounds Frozen Corn Kernels
- 3 sticks Butter
- 3 boxes 8oz Cream Cheese
- 2 teaspoons Adobo Seasoning
- 2 To 3 Whole Poblano Peppers, Roasted, Seeded And Diced
- You can defrost corn in the microwave if you are in a hurry or just use it frozen. I add everything but peppers to the crock pot. When everything is heated through and the cream cheese and butter are melted, add the peppers. It is ready at this point.
- This is a great dish to make when a crowd is coming over to eat. So easy and so so good!
- Obviously, this is for a crowd and can be scaled down. You can use 3 to 4 jalapeno peppers (seeded and diced) or even the jalapenos that are canned or in a jar instead of poblano pepper. Both ways are delicious. You can adjust peppers to your liking. It can also be made on the stovetop. You can use drained canned corn instead of frozen, and if you cannot find the adobo seasoning, it is just as tasty without it.
