Blueberry And Peach Clafoutis
- 1-1/4 cup Milk
- 6 Tablespoons Sugar
- 2 Tablespoons Amaretto Liqueur
- 1 Tablespoon Vanilla Extract
- 6 whole Eggs
- 1/2 teaspoons Salt
- 3/4 cups All-purpose Flour
- 3 cups Combination Of Fresh Blueberries And Sliced Peaches
- Confectioners Sugar And/Or Creme Fraiche, For Serving (optional)
- Butter a 10" cast iron skillet and set aside. Preheat oven to 425 F.
- In a blender or food processor combine the milk, sugar, amaretto, vanilla, eggs and salt. Pulse until smooth and combined. While the motor is running, add the flour and process until the lumps are gone.
- Pour the batter into the skillet and sprinkle fruit evenly over the top. Place pan on a baking sheet and then into the oven. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Remove it from the oven and set pan on a rack. Cool slightly, sprinkle with confectioners' sugar and serve with creme fraiche or maple syrup.
