Sassy Gazpacho
- 6 Roma Tomatoes, Coarsely Chopped
- 1 Medium Onion, Coarsely Chopped
- 3 cloves Garlic, Chopped
- 1/2 cups Chicken Or Vegetable Broth
- 1 Small Zucchini, Coarsely Chopped
- 1 English Cucumber, Unpeeled And Coarsely Chopped
- 1 Red Bell Pepper, Seeded And Coarsely Chopped
- 1/2 teaspoons Cumin
- 32 ounces, fluid Vegetable Or Tomato Juice
- Hot Sauce, To Taste (optional)
- 2 Tablespoons White Wine Vinegar
- 1/2 cups Fresh Dill, Finely Chopped
- 1/2 cups Fresh Cilantro, Finely Chopped
- Salt And Pepper, to taste
- Drizzle Of Olive Oil For Serving
- Squeeze Of Lime Juice For Servings
- 1. Puree the tomatoes, onion, garlic and broth in your food processor or blender and then transfer to a large bowl.
- 2. Pulse the zucchini, cucumber, pepper, a dash of salt and pepper and cumin until veggies are small in size. Add this into the bowl.
- 3. Add the vegetable juice, a dash or two of hot sauce (if using), vinegar and finely chopped dill and cilantro into the bowl and then mix together.
- 4. Chill for at least 2 hours. Add salt and pepper to taste and then serve with a drizzle of olive oil and a lime wedge.
