Dairy & Sugar Free Almond Chocolate Truffles
- 1/2 cups Raw Cashew Nuts
- 1/2 cups Melted Coconut Oil
- Pinch Of Salt
- 1/4 cups Honey
- 1/2 teaspoons Vanilla Essence
- 1/4 teaspoons Almond Essence
- 1/2 teaspoons Cinnamon
- 1 cup Cocoa Powder
- Shredded Coconut, Ground Almonds, Cranberries Or Cocoa Powder, For Rolling
- Process cashews in a food processor until fine. Place cashews in a bowl and add melted coconut oil, salt, honey, vanilla essence, almond essence and cinnamon, mixing well with a metal spoon. Add cocoa and stir until combined. The mixture will be nice and thick. Place in the freezer for 20 minutes.
- Take about 1 heaping teaspoonful of the mixture and roll into a small ball with your hands. Do this with remaining mixture. Roll each ball in shredded coconut, ground almonds, cranberries or cocoa powder.
- Store in the fridge until you are ready to eat.
