Baked Cheesy Squash Casserole
- 3 Tablespoons Olive Oil
- 6 Medium Yellow Summer Squash, Diced
- 1 Large Vidalia Onion, Diced
- 2 teaspoons Sugar
- 2 cups Cheddar Cheese, Shredded
- 1/2 cups Breadcrumbs
- 2 Eggs
- 1 stick Butter
- 1/2 cups Flour
- 1 cup Half-and-Half Or Milk
- Salt And Pepper, to taste
- 1/2 cups Panko
- Preheat the oven to 375u0b0F.
- Heat the oil in a large skillet over medium heat. Saute the squash and onion with sugar until barely soft, approximately 5-7 minutes. Transfer to a bowl and add Cheddar, breadcrumbs and eggs. Stir to combine.
- In the same pan you sauteed the squash, melt butter then add flour and cook 1 minute. Whisk in half-and-half (or milk) and cook another minute until smooth and thick. Add the roux to the squash mixture. Mix everything together. Add salt and pepper, to taste.
- Pour into prepared casserole dish and top with panko. Bake for 20-25 minutes or until the top is golden and bubbly.
