Baked Cheesy Squash Casserole

  1. Preheat the oven to 375u0b0F.
  2. Heat the oil in a large skillet over medium heat. Saute the squash and onion with sugar until barely soft, approximately 5-7 minutes. Transfer to a bowl and add Cheddar, breadcrumbs and eggs. Stir to combine.
  3. In the same pan you sauteed the squash, melt butter then add flour and cook 1 minute. Whisk in half-and-half (or milk) and cook another minute until smooth and thick. Add the roux to the squash mixture. Mix everything together. Add salt and pepper, to taste.
  4. Pour into prepared casserole dish and top with panko. Bake for 20-25 minutes or until the top is golden and bubbly.
