Crunchy Plum Crisp

  1. Mix together the filling:
  2. Pit the plums and chop them roughly.
  3. In a baking dish, combine chopped plums, sugar and pinch of salt. Toss to combine. I like the tartness of the plums combined with the sweetness of the topping, but if you like things a little sweeter, you could add more sugar in this step.
  4. Next, make the topping.
  5. Mix (use the paddle attachment if you are using a stand mixer) together flour, light brown sugar, oats and walnuts until combined. Add the cold, diced butter and mix on low until it forms small, pea-sized crumbles.
  6. Distribute the topping evenly over the plums.
  7. Bake at 350 for 30 - 35 minutes.
  8. If the topping hasn't browned to your liking, raise oven rack and let it sit for a few more minutes until golden brown and bubbling.
  9. Enjoy!
