Stovetop Berry Crumble

  1. Place a skillet over low to medium heat and add berries, cornstarch, water and stevia. Mix constantly until thick and bubbly (about 7 minutes). For more juice, smash down some of the fruit. Once thickened and fruit is softened, set heat to the lowest setting, occasionally stirring.
  2. Meanwhile, in a mini food processor add oats and cinnamon and process until you reach a flour-like consistency.
  3. In a separate skillet add oat mixture and heat over low to medium heat, stirring occasionally until lightly toasted. Once you smell the oats, add 1 tablespoon of butter and stevia. Mix until combined. If the crumble topping seems too dry, add one more tablespoon of butter.
  4. Add oat mixture over the top of the berry mixture. Serve warm with ice cream or a dollop of whipped cream.
