Blackberries, Blue Cheese And Black Forest Ham Salad
- FOR THE SALAD:
- 4 cups Mixed Salad Greens (or As Much As Desired For 2 Servings)
- 1/2 cups Sliced Carrots, Sliced Crosswise
- 1/4 cups Shelled Edamame
- 1/2 cups Sliced And Quartered Hothouse Cucumbers (Or A Regular Cucumber)
- 1/4 pounds Thinly Sliced Black Forest Ham
- 1/4 cups Dried Cranberries
- 1/2 cups Crumbled Blue Cheese
- 1 cup Fresh Whole Blackberries
- FOR THE BLUE CHEESE DRESSING:
- 1/2 cups Mayonnaise
- 1/4 cups Milk
- 1/2 teaspoons Lemon Juice
- 4 dashes Salt
- 5 dashes Ground Black Pepper
- 4 dashes Onion Powder
- 3 Tablespoons Crumbled Blue Cheese
- For the salad:
- Add the mixed greens to a platter or 2 individual serving plates. Next, top with the carrots, shelled edamame, and cucumbers. Then roll the slices of ham together in one big roll and slice the ham width-wise in thin strips. Then add the ham, dried cranberries, crumbled blue cheese and blackberries on top of the salad. Set aside for a moment.
- For the blue cheese dressing:
- In a small bowl add the mayonnaise, milk, lemon juice, salt, pepper, onion powder and blue cheese. Mix together. Just before serving drizzle the blue cheese dressing on the salad.
