Chicken Cacciatore
- 3 lb. (1) broiler fryer, cut up
- 3 Tbsp. olive or vegetable oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1/2 lb. mushrooms, sliced
- 1 large can tomatoes
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. oregano, basil or Italian seasoning
- 1 (8 oz.) can tomato puree or sauce
- 1 sweet green pepper, seeded and sliced
- Heat oil in Dutch oven or large kettle.
- Brown chicken, part at a time; remove and keep warm.
- Pour off all but 1 tablespoon of oil.
- Add onion, garlic and mushrooms; cook 1 minute.
- Add tomatoes, sauce, salt and pepper and other seasonings.
- Add 1 cup of water or rinse sauce can by filling with water and adding to pot.
- Cook for 1 minute.
- Return chicken to pot; simmer over low heat for 1 hour or until chicken is tender.
- Add green pepper. Cook several minutes.
- Makes 4 servings.
- If you want to make 6 servings, increase vegetables.
- Great for a main dish.
