Chicken Cacciatore

  1. Heat oil in Dutch oven or large kettle.
  2. Brown chicken, part at a time; remove and keep warm.
  3. Pour off all but 1 tablespoon of oil.
  4. Add onion, garlic and mushrooms; cook 1 minute.
  5. Add tomatoes, sauce, salt and pepper and other seasonings.
  6. Add 1 cup of water or rinse sauce can by filling with water and adding to pot.
  7. Cook for 1 minute.
  8. Return chicken to pot; simmer over low heat for 1 hour or until chicken is tender.
  9. Add green pepper. Cook several minutes.
  10. Makes 4 servings.
  11. If you want to make 6 servings, increase vegetables.
  12. Great for a main dish.
