Cinnamon Apple Crumble Muffins
- 1 cup White Whole Wheat Flour
- 1/2 cups Rolled Oats
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Sea Salt
- 2 teaspoons Cinnamon
- 1 whole Banana, Mashed
- 3/4 cups Brown Sugar
- 1 whole Egg
- 1 teaspoon Almond Extract
- 1 Tablespoon Honey
- 3/4 cups Milk
- 1 cup Apples, Chopped
- FOR THE CRUMB TOPPING:
- 1/4 cups White Whole Wheat Flour
- 1/4 cups Oats
- 3 Tablespoons Brown Sugar
- 1 Tablespoon Cinnamon
- Preheat oven to 350u0b0F. Spray standard muffin tins with cooking spray.
- In a bowl, mix flour, oats, baking powder, salt, and cinnamon. Set aside.
- In another bowl, mix all ingredients for crumb topping and set aside.
- In a mixer, cream banana and sugar. Add in egg, almond extract, honey, and milk. Combine well. Fold in dry ingredients. Mix until combined. Gently fold in apples.
- Pour into muffin tins, filling 3/4 full. Sprinkle the top of batter with crumb topping mix.
- Bake 18-22 minutes until an inserted toothpick comes out clean.
