Chili
- 2 pounds Ground Chuck
- 2 whole Large Onions, Chopped
- 2 cloves Garlic, Minced
- 1 whole Jalapeno Pepper, Seeded, Rinsed And Chopped
- 3 Tablespoons Chili Powder (this Is Where I Start And Add A Little At A Time)
- 1 Tablespoon Ground Cumin
- 1 teaspoon Celery Salt
- 1 teaspoon Black Pepper
- 1 can Green Chilies, Undrained And Chopped
- 28 ounces, weight Chopped And UNdrained Tomatoes
- 15 ounces, weight Tomato Sauce
- 4 cups Cocktail Juice (V-8 Juice)
- Combine ground beef, onion, garlic, and jalapeno pepper in a large Dutch oven. Cook over medium heat, stirring to crumble meat, until meat is browned and onion is tender. Drain off pan drippings. Add remaining ingredients. Stir well. Cover and simmer one hour.
