Lexington Cookies

  1. Preheat oven to 300 F.
  2. In a medium bowl, whisk together flour, baking soda and salt. Set aside.
  3. In the bowl of a stand mixer, beat together butter, brown sugar and sugar until light and fluffy. Add in eggs, one at a time and mix in between additions. Mix in the vanilla.
  4. With the mixer on low, add 1/2 cup of flour mixture into the batter a time. Once it's all been added in, pour in chocolate chips, toffee bits and almonds. Mix until just combined.
  5. Spoon dough onto a parchment paper lined baking sheet, spacing dough balls about 2" apart. Bake for 21-22 minutes. Remove pan from oven and set on a wire rack for a minute. Then remove cookies from baking sheet and cool on a wire rack. Devour.
