Almond Chocolate Chip Toffee Cookies
- 3/4 cups Butter, Softened
- 3/4 cups Sugar
- 2 whole Eggs
- 1-1/2 teaspoon Vanilla
- 1-1/4 cup Flour
- 1 cup Almond Meal
- 1 teaspoon Baking Soda
- 3/4 teaspoons Salt
- 1 package Toffee Bits (10oz Size), Such As Heath
- 3 whole Milk Chocolate Candy Bars 1.55 Oz Each, Hershey Bars, Unwrapped And Chopped
- Preheat oven to 350 F. Lightly grease 2 baking sheets and set aside.
- In the bowl of a stand mixer combine butter and sugar and mix until creamy. Add eggs and vanilla, continue to beat until well blended.
- Mix in flour, almond meal, baking soda and salt. Mix until thoroughly combined. Use a rubber spatula and stir in toffee bits and chopped chocolate.
- Drop by tablespoons onto prepared baking sheets, leaving about 2 inches in between each. Bake for 9-11 minutes or until edges begin to brown. Remove baking sheets from the oven and set them on a rack. Let cookies sit on the baking sheet for 2-3 minutes for centers to set. Remove cookies to a rack to cool completely.
