Almond Chocolate Chip Toffee Cookies

  1. Preheat oven to 350 F. Lightly grease 2 baking sheets and set aside.
  2. In the bowl of a stand mixer combine butter and sugar and mix until creamy. Add eggs and vanilla, continue to beat until well blended.
  3. Mix in flour, almond meal, baking soda and salt. Mix until thoroughly combined. Use a rubber spatula and stir in toffee bits and chopped chocolate.
  4. Drop by tablespoons onto prepared baking sheets, leaving about 2 inches in between each. Bake for 9-11 minutes or until edges begin to brown. Remove baking sheets from the oven and set them on a rack. Let cookies sit on the baking sheet for 2-3 minutes for centers to set. Remove cookies to a rack to cool completely.
