Easy Fig Pastry

  1. Preheat oven to 375 F. Divide thawed puff pastry into four fairly equal rectangular pieces and place on a baking sheet lined with parchment paper.
  2. Spread goat cheese on each piece leaving a border around the edge. Add jam, figs and chopped walnuts. Brush figs and edges of puff pastry with melted butter. Slightly turn up the pastry edges to create a lip.
  3. Bake for 18-20 minutes or until pastry is golden and puffy. Remove from oven. Garnish with chopped mint leaves and more walnuts, if desired.
