Cranberry-Cherry Relish(Chutney-Like Condiment)
- 2 c. firmly packed dark brown sugar
- 1 1/2 c. raisins
- 1 orange (unpeeled), cut into 1/4 inch pieces
- 1 lemon (unpeeled), cut into 1/4 inch pieces
- 1 c. canned pitted dark sweet cherries, drained
- 1/2 c. distilled white vinegar
- 1/2 cinnamon stick
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. ground nutmeg
- 1 1/2 c. fresh cranberries
- Combine all ingredients except cranberries in heavy large saucepan.
- Bring mixture to boil over medium heat, stirring frequently.
- Reduce heat and simmer 10 minutes.
- Add cranberries and simmer until they begin to pop, about 5 minutes more.
- Remove cinnamon stick.
- Cover and refrigerate until cold.
- Can be prepared 1 week ahead of time.
- Makes about 4 cups.
