Easy Lemon Poppy Seed Blender Muffins
- 1 cup Rolled Oats
- 2 Large Very Ripe Bananas
- 1 Lemon, All The Zest And 3/4 The Juice
- 2 Eggs (large)
- 1 cup Greek Yogurt
- 1 Tablespoon Coconut Oil
- 3 Tablespoons Honey
- 1-1/2 teaspoon Baking Powder
- 1 teaspoon Bicarbonate Of Soda
- 1 teaspoon Vanilla Extract
- Pinch Of Salt
- 1 Tablespoon Poppy Seeds
- Preheat oven to 180u0b0C (390u0b0F) and lightly grease a muffin pan with coconut oil.
- Place all ingredients except poppy seeds in a blender or food processor and pulse until combined. Blend continuously until mixture is smooth and oats are almost completely broken down. Stir in poppy seeds.
- Pour the mixture into the muffin pan, filling each cup 3/4 full. Bake for 20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
- Allow to cool in the muffin pan on a cooling rack for about 15 minutes before turning out. Enjoy!
