Coconut And M&M Cookies
- 2-1/2 cups Whole Wheat Pastry Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1 cup Butter, Room Temperature
- 3/4 cups Presweet Tagatose Or Granulated Sugar
- 1/2 cups Brown Sugar
- 1/2 cups Egg Subsitute Or 2 Large Eggs
- 1/2 teaspoons Vanilla Extract
- 1/2 teaspoons Coconut Extract
- 3/4 cups Unsweetened Shredded Coconut
- 1/2 cups Chocolate M&Ms (Coconut Ones Would Be Great, Too)
- Preheat oven to 350u0b0F. Line 2 baking sheets with a Silpat or parchment paper; set aside.
- In a bowl add flour, baking soda and salt; set aside.
- In a large bowl, cream butter and sugars until combined. Beat in eggs, vanilla and coconut extract until smooth. Gradually add flour mixture until combined.
- Stir in shredded coconut and M&Ms.
- Drop by well rounded teaspoons onto prepared baking sheets. Bake 8-10 minutes until golden brown.
