Broccoli Chicken Casserole
- 1/4 c. margarine
- 1 3/4 c. water
- 1 Tbsp. minced onion
- 10 oz. chopped frozen broccoli
- 1 1/2 c. rice
- 1 can cream of chicken soup (may substitute other cream soup)
- 4 to 8 oz. Cheez Whiz to taste (may omit)
- 1 lb. cooked chicken (may substitute ham or turkey)
- bread crumbs
- Boil margarine, water and onion in large saucepan.
- Add broccoli.
- Return to low boil and cook for 3 minutes.
- Add 1 1/2 cups rice.
- Remove from heat, cover and let stand for 5 to 7 minutes, until rice is fluffy.
- Stir in cream of chicken soup and Cheez Whiz.
- Return to low heat, if needed, to melt cheese.
- Stir in chicken and heat until ready to serve.
- Or, at this point, place in casserole dish, top with bread crumbs and cook at 350u0b0 for 20 to 30 minutes.
- Serves 4 to 6.
