Easy White Chocolate Cranberry Oatmeal Cookies
- 1 cup Butter, Softened
- 1 cup Sugar
- 1 cup Firmly Packed Brown Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 3 cups Oatmeal (rolled Or Quick Oats)
- 1 cup White Chocolate Chips
- 1 cup Dried Cranberries
- Cream butter and sugars. Add eggs and vanilla. Mix well.
- Mix together flour, soda and salt in a separate bowl. Add to the butter/sugar/egg mixture. Mix well. Fold in oatmeal, chips and cranberries. Dough will be stiff.
- Drop by spoonfuls onto a cookie sheet lined with parchment paper. Bake at 325 degrees for 10-12 minutes.
- For a doughier cookie, increase flour to 2 cups.
- You can switch the cranberries and white chocolate chips to any other dried fruit and baking chip to create a different flavor.
