Old Fashioned Peach Cobbler

  1. Combine cornstarch and 1/4 cup apple juice; stir well and set aside.
  2. Combine peaches, 1 cup apple juice, sugar and 1/2 teaspoon nutmeg in a Dutch oven.
  3. Bring to boil; cover and reduce heat and simmer 8 to 10 minutes or until peaches are tender.
  4. Stir in reserved cornstarch mixture.
  5. Cook, stirring constantly, until thickened and bubbly.
  6. Remove from heat, stir in almond extract. Combine 1/2 cup flour, salt and 1/8 teaspoon nutmeg in a medium bowl.
  7. Cut in margarine with a pastry blender; sprinkle with cold water until moistened.
  8. Roll in 8-inch square; cut in strips.
  9. Coat Dutch oven with cooking spray and arrange dough strips over fruit mixture.
  10. Bake at 425u0b0 for 20 minutes.
