Meat Ball Stew
- 2 c. Kellogg's Corn Flakes cereal
- 1 egg
- 1 (10 1/2 oz.) can condensed beef broth, divided
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 lb. ground beef
- 2 Tbsp. vegetable oil
- 1 (10 3/4 oz.) can condensed tomato soup
- 1/2 c. water
- 1/4 tsp. thyme
- 2 c. frozen sliced carrots
- 1 medium onion, sliced into rings
- 1 (1 lb.) can whole white potatoes, drained
- dried parsley flakes
- Measure Corn Flakes into large bowl.
- Crush slightly.
- Stir into egg, 1/4 cup beef broth, salt and pepper.
- Beat well and add ground beef.
- Mix well.
- Make into balls and brown meat balls in oil in frying pan over medium heat.
- Pour off excess fat.
- Stir in the remaining beef broth, tomato soup, water, thyme, carrots, onion rings and potatoes.
- Cover and cook over medium heat about 25 minutes or until meat balls are thoroughly cooked.
- Pour into individual bowls.
- Sprinkle with parsley flakes.
