Everything Egg Bake
- 1 whole Potato
- 3 whole Sausage Patties (1/2 Inch Thick Patties)
- 3 whole Eggs
- 1/4 cups Shredded Cheddar Cheese
- 1 Tablespoon Sriracha
- 1 teaspoon Garlic Salt
- 1 teaspoon Black Pepper
- 3 whole Scallions
- Butter, For Greasing The Dish
- Preheat the oven to 300 F.
- Microwave the potato for about 5 minutes on the potato setting and grease your baking dish with butter on the bottom and sides. I used a small, 2-serving size cassoulet.
- Also cook your sausage patties in a skillet over medium heat for about 5 minutes (flip halfway through) while the potato is in the microwave.
- When it's done, remove the potato from the microwave. Carefully slice the hot potato and mash it to the bottom of the dish.
- Remove sausage from the pan, blot off any grease and crumble it into a bowl. Crack eggs and add them into the glass. Stir in cheese, Sriracha, garlic salt, and pepper. Mix everything up with a fork and pour it into the baking dish.
- Bake for 30 minutes. Remove from oven. Garnish with scallions and serve hot.
