Caesar Salad
- 1 clove garlic, peeled
- 1/3 c. canola oil
- 1 1/2 tsp. salt
- 1/4 tsp. dry mustard
- 1 tsp. ground black pepper
- 1 inch squirt anchovy paste
- 1 splash Worcestershire sauce
- 3 Tbsp. red wine vinegar
- 1 raw fresh egg
- juice of 1 fresh lemon
- 2 heads romaine lettuce, torn
- 3 Tbsp. Parmesan cheese
- 1 c. garlic and cheese-flavored croutons
- garlic
- salt, mustard and pepper
- anchovy paste
- vinegar and Worcestershire sauce
- oil
- egg
- lemon juice
- lettuce
- Parmesan cheese
- croutons
- Have all ingredients ready.
- In large wooden or glass bowl, smash garlic with spoon and rub all over bowl.
- Add salt, mustard and pepper and rub well into garlic.
- Add anchovy paste and blend well.
- Add vinegar and Worcestershire sauce and blend well.
- Add oil and blend well.
- Add egg and blend well.
- Add lemon juice and blend well.
- Add salad greens and toss to coat.
- Sprinkle with Parmesan cheese and toss.
- Add croutons and toss.
- Serve immediately.
