Sugar Cake Cookies
- 2 whole Eggs
- 3/4 cups Sugar
- 1/2 cups Canola Oil
- 1/4 cups Pineapple Juice
- 1 teaspoon Vanilla Extract
- 2 teaspoons Baking Powder
- 3 cups All-purpose Flour
- 1 cup Frosting, (Store-Bought Or Homemade)
- 1. In a food processor, pulse to mix eggs and sugar until well blended.
- 2. Add oil, pineapple juice and vanilla into food processor and mix until well blended.
- 3. Add baking powder and flour (one cup at a time) into the food processor and mix until all ingredients are well incorporated; dough will be very sticky.
- 4. Use a 1-inch ice cream scoop to scoop tablespoons of batter onto a greased cookie sheet.
- 5. Bake at 350 F for 10 minutes. Then remove from the oven.
- 6. While cookies are still warm, spread with 1 tablespoon of frosting per cookie.
