Sugar Cake Cookies

  1. 1. In a food processor, pulse to mix eggs and sugar until well blended.
  2. 2. Add oil, pineapple juice and vanilla into food processor and mix until well blended.
  3. 3. Add baking powder and flour (one cup at a time) into the food processor and mix until all ingredients are well incorporated; dough will be very sticky.
  4. 4. Use a 1-inch ice cream scoop to scoop tablespoons of batter onto a greased cookie sheet.
  5. 5. Bake at 350 F for 10 minutes. Then remove from the oven.
  6. 6. While cookies are still warm, spread with 1 tablespoon of frosting per cookie.
