Cherry Chip Donuts
- FOR THE DONUTS:
- 2 cups Cake Flour, Sifted
- 3/4 cups Sugar
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 3/4 cups Buttermilk
- 2 whole Eggs, Lightly Beaten
- 2 Tablespoons Butter, Melted
- 4 Tablespoons Maraschino Cherry Juice
- 1 cup Mini Chocolate Chips
- FOR THE GLAZE:
- 1 cup Powdered Sugar
- 4 Tablespoons Cherry Juice
- 1 Tablespoon Milk
- For the donuts:
- Preheat oven to 425u0b0F. Spray donut pan, set aside.
- Mix cake flour, sugar, baking powder, and salt in a large bowl. Stir in wet ingredients (buttermilk, eggs, melted butter, cherry juice) and chips until combined. Pour batter in a large ziptop bag and snip the corner. Pipe batter into donut cavity, filling each about 2/3 full.
- Bake in oven for 7 minutes or until donuts spring back when touched. Let donuts cool in pan for 4 or 5 minutes before removing to a rack to cool completely.
- For the glaze:
- In a bowl, whisk together glaze ingredients. Dip tops of each donut in glaze. This will make enough to top the donut. Double of you want to dip the entire donut.
