Shrimp Scampi
- 2 lb. fresh large shrimp
- 1/2 c. butter or margarine
- 1 tsp. salt
- 6 cloves garlic, crushed
- 1/4 c. chopped fresh parsley
- 2 tsp. grated lemon zest
- 2 Tbsp. fresh lemon juice
- 3 c. hot cooked white rice
- parsley sprigs and lemon wedges for garnish
- Preheat oven to 400u0b0.
- Slit each peeled shrimp along back edge.
- Dry shrimp well on paper towels.
- Melt butter in 9 x 13-inch pan, adding salt, garlic and tablespoon of chopped parsley.
- Arrange shrimp in single layer and bake uncovered for 5 minutes.
- Turn and baste shrimp cooking on both sides.
- Sprinkle shrimp with lemon zest, lemon juice and remaining parsley.
- Bake until shrimp is pink and tender.
- Do not overbake.
- Serve with rice and garnish with remaining parsley.
