Banana Toffee Scones

  1. Preheat oven to 400 F.
  2. Combine all of the dry ingredients (flour through cinnamon) in a large bowl. Add the butter and cut it in with a fork until well mixed. Create a well in the center of the mixture and add the milk, vanilla, and bananas. Gently mix until everything is incorporated.
  3. Place the dough on a non-stick baking sheet and pat into an 8-inch circle that is about 1 inch thick. Use a knife and gently score the dough into 8 wedges (don't cut all the way through, just lightly score it).
  4. Bake at 400 F for 20 minutes. Remove from the oven and cut through the score marks spacing the wedges out a bit. Place back in the oven for 5 minutes. Remove pan from the oven and place on a wire rack until cool. Store in a sealed container for 4-5 days. Makes 8 scones.
