Pete'S Crab Cakes
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- 5 Tbsp. butter (2 uses)
- 12 oz. crab meat, drained
- 1 1/4 c. Italian bread crumbs
- 1/4 c. mayonnaise
- 1 egg, lightly beaten
- 1 tsp. fresh lemon juice
- 1 1/2 tsp. Worcestershire sauce
- 1/8 tsp. ground white pepper
- In a large skillet, saute onion and celery in 1 tablespoon butter for 3 minutes.
- In a medium bowl, combine onion and celery mixture, crab meat, 3/4 cup bread crumbs, mayonnaise, egg, lemon juice, Worcestershire sauce and pepper.
- Mix well and shape into 4 patties.
- Coat with remaining 1/2 cup bread crumbs, pressing crumbs into patties.
- In same large skillet over medium heat, melt remaining 4 tablespoons butter.
- Fry patties in butter until golden brown on both sides, about 8 to 9 minutes total.
- Makes 4 crab cakes.
